In the article, the authors present the results of assessing the quality and safety of milk and beef meat in various districts of the Karaganda region. The following studies were carried out: organoleptic and physico-chemical indicators; the total toxicity and residual amount of heavy metal compounds were determined; the quality and safety of livestock products from various areas of the study area were assessed; organoleptic and physico–chemical indicators of milk and beef meat were carried out; the dynamics of seasonal accumulation of residual amounts of heavy metal compounds in milk and beef was also established.
